This is a wonderful low-sodium stock. Use as a base for soups and stews.


Ingredients
1
turkey carcass
12 cups
cold water
2
celery stalks
2
carrots
1
onion, skin on
1 tsp
Black Pepper

Preparation
  1. Place all ingredients in a large pot and bring to a boil. Reduce temperature to a slow simmer.
  2. Simmer 2 hours, skimming off any foam that collects on the surface. Strain.
Tips

Preparation Tip: To easily remove fat from surface of stock, chill before using.
