Moroccan Carrot Dip is very versatile. Serve hot or cold.


Ingredients

medium carrots, peeled and coarsely chopped
2
small onions, coarsely chopped
2 tbsp
vegetable oil
2 tsp
mint, fresh or dried
13 cup
vinegar (cider, malt, balsamic or wine vinegar)
13 cup
water
1 tsp
Black Pepper, or to taste

Preparation
  1. Cover carrots and onions with lightly salted water and boil until tender. Drain.
  2. Blend hot carrots and onions in food processor with remaining ingredients to make a rough purée.
Tips

Serve with Greek Pita Chips.

Serve hot as a vegetable side dish with Moroccan-style meals.
